In The Kitchen: Zucchini Linguini with Roasted Shrimp

Hey guys! It’s been a hot minute since my first “In the Kitchen” post.  Now this doesn’t mean I haven’t been eating lol, I’ve just been a bit busy juggling school and work. Most days I’ve just been eating leftovers or eating out (which costs way too much!). If I’m serious about gaining the 10lbs I so desire I gotta make sure I’m eating right.

Today, I want to share with you one of my favorite recipes which is also my go to recipe for when I am: 1) feeling a bit lazy, 2) too tired from work/ school and 3) just want a quick meal. My friend who was in law school at the time introduced me to this meal a little over a year ago and since then it has been a staple in my life. The good thing about this recipe is that you can get all the ingredients for under $20 and it takes less than 30 minutes to make.

2 zucchini squashes

1 pound shrimp, peeled and deveined

½ yellow bell pepper, sliced thin

1 lemon juiced (about 2 tablespoons)

1 teaspoon kosher salt

1 teaspoon black pepper

½ teaspoon garlic powder

2 tablespoons olive oil



Preheat oven to 400°F.

Use a vegetable peeler, peel long strips from the zucchini.

In a large bowl, mix the zucchini strips, shrimp, sliced bell pepper, lemon juice, salt, pepper, garlic powder, and olive oil until the mixture is evenly coated.

On a roasting tray, spread the mixture into one even layer and bake for 8 minutes.

Partake in this delicious meal!

  1. Oh my goodness, I have just got into zucchini again! My mouth was watering just reading the ingredients (lbs). I definitely agree that it’s super hard to cook while in school without prepping…but I can see myself popping this into the oven while reading and have a good cooked meal ready when I’m finished! I will be trying this out! Thanks for sharing.

  2. This is about fifty something dollars here Sis Shrimp expensive lol I was thinking to get one of those spiral jigga ma thing thing that makes the vegetables into the noodles shape . Amma try this recipe 😀
